There’s nothing quite like a fresh bouquet of peonies. Their large, fragrant blooms are one of the most anticipated signs of early summer but their season is heartbreakingly short.
The good news? Harvesting them at the right stage can dramatically extend their vase life, and you can even store them in the cooler for weeks (or even months) to enjoy long after peak season.
Here’s exactly how we harvest and store peonies at Valhaven Farm.
1. Don’t Pick Them Too Early
If the flower bud feels hard like a marble, it isn’t ready yet.
Although it may be tempting to harvest early, buds picked at this stage often struggle to open properly because they haven’t developed enough. Instead, give them a little more time.
2. Harvest During the “Marshmallow Stage”
The best time to harvest a peony is during what growers commonly call the marshmallow stage. This is when:
- The bud feels soft when gently squeezed, similar to a marshmallow.
- The outer green sepals are beginning to pull away from the flower.
- You can often see the bloom colour peeking through.
Picking at this stage gives you the longest vase life while still allowing the flowers to open beautifully indoors. Peonies can change quickly, especially during warm weather, so it’s a good idea to check your plants every day once the buds begin to soften.
3. Don’t Wait Until They’re Fully Open
A fully open peony may be beautiful in the garden, but it won’t last nearly as long once it’s cut. If your bloom is already completely open, expect the petals to begin dropping in just 2–3 days. Harvesting just before the flower opens allows you to enjoy every stage of the bloom inside your home.
4. Cut Your Stems Properly
When harvesting, use clean, sharp snips and cut the stem at approximately a 45-degree angle. This gives the stem a larger surface area to absorb water and helps keep your flowers hydrated. Be careful not to remove too much foliage from the plant. Peonies rely on their leaves to collect energy and produce strong blooms the following year.
Once your stems are cut:
- Remove any leaves that will sit below the waterline.
- Place the stems in a clean bucket or vase.
- Fill it with fresh, cool water.
- Keep the flowers somewhere cool and out of direct sunlight.
Clean tools, containers and water all help prevent bacteria from building up and shortening the life of your flowers.
5. Want to Save Them for Later? Refrigerate Them!
One of the best-kept secrets about peonies is how well they store.
Harvest your blooms during the marshmallow stage, then place them in a refrigerator. Under the proper conditions, peonies can often be stored for up to two months, allowing you to enjoy fresh blooms well beyond their natural flowering season.
This is a great option for:
- Growing your own wedding flowers
- Special events
- Enjoying peonies after the garden has finished blooming
Keep them away from fruits and vegetables, which naturally release ethylene gas as they ripen. This can cause your flowers to age more quickly.
When you’re ready to use them, make another fresh cut, place the stems in clean water and allow them time to wake up and begin opening.
6. Help Your Peonies Bloom Again Next Year
Once the flowers on your plants begin to fade, remove the spent blooms rather than allowing them to remain on the plant.
Producing seeds takes energy. By deadheading your peonies, you encourage the plant to send that energy back into its root system, leading to healthier plants and better blooms next season.
Remove the finished flower head, but leave the healthy foliage in place throughout the summer. Those leaves will continue feeding the plant and helping it prepare for next year’s blooms—and hopefully even more flowers to look forward to next peony season.

A few simple harvesting techniques can make a big difference in how long your peonies last. Peony season may be short, but by watching for the marshmallow stage, cutting your stems properly and storing extra blooms in the cooler, you can enjoy their beauty for much longer!
